
WALNUT SHIRINI
Ingredient
3 egg yolks
100g brown sugar
1 teaspoon vanilla extract
3 tablespoons orange juice
Zest of 1 orange
25g corn flour
25g rice flour
150g ground walnut
50g chopped walnut
Method
Preheat the oven 160c.
Put 150g walnuts in a food processor and blitz until you have ground walnut. Empty the walnut into a mixing bowl. Put 50g walnut into the food processor and blitz just to break them into pieces. Aim for chunks of walnut. Add chopped walnuts, corn flour, and rice flour into a ground walnut bowl.
In an electric mixer add egg yolk, orange juice, vanilla, orange zest and sugar and mix using pedal attachment. Mix until creamy mixture forms. Add dry ingredients and mix just to combine.
Pipe the mixture onto lined trays and bake for 15 minutes or until golden on top. Leave to cool.
This biscuits keep in an airtight container for 3 weeks.
